Cornmeal Carrot Cake (Bread)
Great tasting, flour free and processed sugar free cornmeal carrot cake which takes only a few minutes to make. Try for yourself this new healthy carrot cake recipe.
Ingredients:
5 carrots
2 eggs
2 cups cornmeal
1/2 cup oats
1/2 cup warm almond milk
2 teaspoons honey
Cinnamon
Pinch of salt
(optional: chopped walnuts)
Preparation:
First, shred the carrots. In a bowl, add all ingredients together and mix with a spoon. Continue mixing until all ingredients are blended.
Grease a pan with almond oil (or butter) and place contents of the bowl in the pan.
Preheat oven to 180C (350F).
Bake for 40-45 minutes.
I’ve made my in a tin for making bread, hence I call it cornmeal carrot bread, but you can make yours any shape. It is nice and moist and can be topped with icing.

The recipe looks terrific but there’s no leavening agent. I’m not sure how it would turn out because of this. What is the finished cake like in terms of heaviness?
It is on the heavier side. I don’t think adding any baking powder or soda would do much for it. However, the taste is good!
